Mozzarella di bufala campana is a dairy product traditionally produced in Campania, especially in the provinces of Caserta and Salerno.
The term mozzarella derives from the name of the mozzarella operation carried out to separate the dough into individual pieces.
Mozzarella is produced only with fresh and whole buffalo milk of Italian Mediterranean breed.
It is often called queen of Mediterranean cuisine, but also white gold or pearl of the table.
